Option: You can substitute the banana with any other kind of fruit.
HOW TO MAKE IT
First thing to do is preheat your oven to 180 °C and roll out your chilled dough. Now you are ready to take your cookie cutters from you kitchen drawer and cut the dough in circular shapes.
I used a scalloped shaped cookie cutter to make cute little edges on my mini tarts. If you have a similar one, that’s perfect, otherwise, do not panic! Any kind of circular cutter will be fine. Once you get the shapes all cut, carefully press them into your mini muffin molds. As you can see from the photo below, I used silicone molds and it actually worked well.
Bake your mini tarts until lightly golden. Watch them carefully because they burn quite easily! Once ready, pull them out of the oven, let them cool and in the meantime prepare the lemon curd. You don’t know how to make it? Do not worry! The list of ingredients is below! Just follow the instructions.
- 3 egg yolks
- 130 gr sugar
- 50g butter
- 2 organic lemon (zest and juice)
HOW TO MAKE IT
In a small saucepan, combine and whisk together yolks, sugar, and lemon juice (2 lemons). Set over medium heat, and stir constantly with a wooden spoon. Make sure to stir sides and bottom of pan. Add in butter and zest (1 lemon) and cook over moderately low heat, whisking frequently. Cook until mixture is thick enough to coat back of wooden spoon. Transfer lemon curd to a bowl and cover its surface with plastic wrap, until cold.
Cut the banana in tiny pieces and fill the tarts.
